The Star has undergone an $870-million redevelopment with the goal of becoming Sydney's most loved entertainment destination. Sydney's dining takes on an exciting new flavour with an all-star cast of international and Australian chefs who have now opened their doors. The Star also boasts new bars, a live music venue, new nightclub, Event Centre, and 5-star hotel The Darling which along with The Spa bring service, sophistication and relaxation to a whole new level. It takes a mix of the best ingredients to become a successful Apprentice Chef at Echo Culinary Institute.

Combine your hunger for learning, passion for cooking, the study of techniques from all over the world, inspired training from the industry’s best chefs and a training program that dishes it up under the one roof!

The Echo Culinary Institute (ECI) has been created by some of the best in the Chef business, setting a new standard for apprenticeship programs, dedicated to training and mentoring those who will be building the future of cooking.

ECI provides a dynamic, friendly, and supportive environment for Apprentice Chefs to achieve and excel. We are seeking candidates with a positive outlook, team player mentality, hard working attitude, a natural flair for flavour and ingredients, and an innate understanding that it’s being a chef is a way of life. It’s not just a job.

In return, we provide off-job training developed in consultation with industry experts, and prospects for future work placement at some of Australiaʼs top culinary and entertainment destinations.

Your apprenticeship will see you undertaking work placement at one of Echo Entertainment Group properties: The Star Hotel & Casino (Sydney), Jupiters Hotel & Casino (Gold Coast), Treasury Casino & Hotel (Brisbane) and Jupiters Hotel & Casino (Townsville).

Over the course of a three year program, you will be in the company of fellow students with the same ambition as you. You will be learning cooking methods such as soups, stocks and sauces, butchery, fish-mongery, wood-fired grilling, pasta, pizza, wok cooking, sushi, sashimi, chinese roasts, and pastry & baking.

We aim to provide you with the ingredients for success. When you bring professionalism and a positive attitude, you’ll enjoy learning the first-rate skills you need to make it big in the world of food.

Sydney's ICC wins national infrastructure award





Sydney’s International Convention Centre (ICC Sydney) at Darling Harbour has been named Australia’s best infrastructure project at the Infrastructure Partnerships Australia’s National Infrastructure Awards.

Andrew Constance Minister for Transport and Infrastructure welcomed the award saying the ICC was a jewel in the NSW Government’s infrastructure crown.

“I am extremely proud that this Government has delivered a world class transformation to the Darling Harbour precinct with the stunning International Convention Centre at its heart,” Mr Constance said.

ICC Sydney cements Sydney as a premium choice on the world stage for major events that this nation has never before had the facilities to host.

“The NSW Government remains focused on the delivery of infrastructure that transforms our state and has a positive impact on our economy. The ICC certainly delivers on this.”

The $1.5 billion ICC Sydney was recognised for its design excellence, construction timeline and outstanding financial performance as well as delivering the nation a new and emblematic piece of business events and tourism infrastructure.

The convention centre officially opened in December 2016 and has already hosted over 170 major events including the Fast 4 Tennis Showdown and performances by Keith Urban and Nick Cave. The convention centre is also generating significant international interest with 115 global events confirmed for Sydney over the next few years.
