Mathew is a HR practitioner with over 16 years of senior Human Resource Management experience within the private and not for profit sector in both Australia and the UK. Setting up own wine tour business
After working in the IT industry for 15 years Richard fancied a career change. With his love of travel he decided to complete a guiding course externally with TAFE SA which could fit around his work and life commitments.
“As part of the course I was required to plan and then run a real tour. I took five people on a wine tour in the McLaren Vale. This was the moment I realised that guiding is what I really wanted to do.”

“Professional” is HTN’s baseline apprenticeship offering for prospective cooks and will provide a Certificate III in Commercial Cookery (SIT30813) outcome.
Anyone can apply, candidates who can demonstrate commitment and a sincere passion for cooking are selected and contracted to HTN. After extensive discussion regarding experience and career expectations, apprentices are then matched to a suitable Host within the Network. Throughout the duration of the Apprenticeship, there are opportunities to train and work with a number of Host Businesses.
HTN’s experienced Industry Advisors will visit you and your Host Business regularly to discuss your performance and progress, ensuring that you are receiving quality “on the job” training every step of the way. Your Industry Advisor will be available at any time to discuss your career development and assist you where possible.

Artisan Butchers are in high demand.
A Retail Butchery apprenticeship will equip you with the skills and knowledge to become a trade qualified butcher.
An apprentice butcher will typically:
- Cut, trim and shape standard cuts of meat to size
- Process carcasses into primary and secondary cuts
- Pack and store products for display and sale
- Order supplies from wholesalers using AUS-MEAT Language, and weigh and check stock on receipt
- Assemble and operate mincers, grinders, mixers, patty-forming or sausage-forming machines, and bandsaws
- Use correct detergents and sanitisers to prevent food poisoning and contamination of premises and equipment
- Assist clients (including hotels and restaurants) with menu planning, estimating food portions and production costs
- Collect payment for sales
- Prepare marinated meats and ready-to-cook dishes
- Advise customers about alternative cuts, cooking methods, storage requirements and nutritional aspects of meat.

The annual HTN Peter Howard Culinary Scholarship is another benefit that is exclusive to HTN Apprentices and Trainees. This scholarship, named after HTN’s official patron, is designed to provide a HTN apprentice with the opportunity to design their own culinary adventure, learning from the worlds best as they go.
The annual scholarship includes return airfares to the UK or China plus $5,000 in spending money.
HTN Apprentices can “self nominate” by creating a video submission of no more than 3 minutes duration addressing the following criteria:

- Show a sincere passion for the industry
- Outline how they would be a good ambassador for HTN and the industry in general

Managing Director – Careers Australia
Patrick is the Managing Director of Careers Australia (CA).
Prior to commencing in his current role as Managing Director for Careers Australia, Patrick had been an industry advocate in major policy issues such as vocational education and training and employment programs, labour market reform, trade practice and competition policy for various industry bodies.
From 2006 to 2009, Patrick was Chairman of TVET Australia Pty Ltd. The owners of TVET Australia are the State, Territory and Commonwealth Ministers for Vocational and Technical Education (VTE). TVET’s primary role is to provide support services for the key stakeholders in Australia’s VET system.
In 2006 the Commonwealth Government appointed Mr McKendry as Chairman of the National Quality Council (NQC). The NQC brings together industry, employee, government and practitioner representatives to oversee and support the current and future quality of vocational and technical education across Australia. Patrick’s term as Chair of the NQC finished at the end of 2009.
Mr McKendry was also appointed as Director of the Worker’s Compensation Regulatory Authority (Q-Comp) Board by the Queensland Government in 2006. He also served as Chairman of the Finance and Audit Committee for this Board. Patrick’s term expired in June 2012.
Mr McKendry in 2011 was appointed by the Queensland Government as a Director of the Queensland Manufacturing Institute (QMI Solutions). QMI Solutions is dedicated to improving the skills, performance, innovation and capability of the Queensland Manufacturing Industry.
In June 2012, Mr McKendry was appointed by the Queensland Government as a Member of the Skills and Training Taskforce. The Taskforce has been commissioned by the Government to review Queensland’s Training System.
In January 2014, Mr McKendry was appointed as a member of the Queensland Government International Education and Training Advisory Council (IETAC). The Council has a specific focus on developing a long term strategy to ensure Queensland international education and training is world class, responsive and robust.

To achieve a SIT30713 Certificate III in Hospitality, 20 units must be completed:
- 7 core units
- 2 compulsory elective units
- 11 elective units
There are three specialisations to choose from:
- Waiter with Sommelier and Barista specialisation
- Café Dining with Barista and Waiter specialisation
- Bar Operations with Multi-Skilled specialisation
The expected duration is 24 months
To achieve a SIT30813 Certificate III in Commercial Cookery, 25 units must be completed:
- 22 core units
- 3 elective units
The expected duration is 36 months
Certificate IV in Hospitality – Traineeship
To achieve a SIT40313 Certificate IV in Hospitality, 21 units must be completed:
- 9 core units
- 12 elective units
The expected duration is 30 months
As and when government funded training becomes available Restaurant and Catering Industry Association of Australia (Provider number 6868) extends subsidised places to members and their employees, eligibility criteria applies.
The recent additions of “On Line” course capability provides a great opportunity for regional and metro members to up skill and keep abreast of industry developments in a cost and time effective manner.
